Heart-healthy recipe: Chai-spiced apple and pear crumble

MAKES: 8 servings or one 8” pie dish, 1 serving = 1/8th of the pie

Ingredients for the Filling:

  • 3-4 medium apples, skin on, washed and chopped into small pieces
  • 3-4 medium pears, skin on, washed and chopped into small pieces
  • ½ cup apricot jam, sugar reduced
    (i.e. PC Blue Menu Twice the Fruit Apricot Spread™)
  • 3 Tablespoons arrowroot flour or cornstarch
  • 3 Tablespoons orange juice
  • 1 Tablespoon orange zest
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cardamom, ground

Ingredients for the Crumble Topping:

  • 2 Tablespoons brown sugar
  • 3 Tablespoons coconut butter or spread
    (i.e. Earth Balance™ Spread Soy Free)
  • 1 cup oats (quick cooking or rolled)
  • 4 Tablespoons whole grain flour
  • ½ cup walnuts, chopped

Direction for the Pie:

  1. Preheat oven to 400°. Lightly grease a round pie dish and set aside.
  2. Mix jam, cornstarch/arrowroot flour, juice, zest, and spices together in a large bowl.
    Core and slice apples and pears. Add fruit to jam mixture and toss well to coat. Place fruit mixture in baking dish.
  3. Make topping by combining the flour, oats, spread and brown sugar in a small bowl until crumbly.
  4. Sprinkle over fruit mixture and top with walnuts.
  5. Bake uncovered for 35-40 minutes or until fruit is tender when tested with a fork.\
  6. To top it with a healthy cold ice cream, use frozen fruits (any fruit combination) and put it through a Dessert Bullet™ or Yonanas™

NOTE: This recipe is also delicious with a variety of seasonal fruits.

Try local grown: apples, apples with berries, apples with pears, peaches, pears, berry mix, etc.
